Champagne Vilmart & Cie
Visited Laurent Champs (5th generation) of Vilmart & Cie. Vilmart is a great producer which has been family-owned since 1890 in Rilly-la-Montagne, close to the city of Reims.
At Vilmart, all wines are vinified and aged in oak casks: Foudres (for NV) and small barrels (for vintage wines), until bottling for the second fermentation around this time of the year. They just finished bottling of the 2017 wine, which are going to sleep in the cellar for at lease several years before disgorgement.
Laurent was so kind as to prepare the extensive tasting of all the range from current release to the old library ones, including the precious bottles of back vintages of 2008, 2002 and 1990, that are all great Champagne vintages.
