My Champagne Life

About me

I had a great opportunity to see Richard Geoffroy again and tasting his latest IWA Assemblage 6 (2024)—a new release—alongside the slightly matured Assemblage 3 (2021) at Sushi Kinsei in downtown Redwood City. Both assemblages showed the same remarkable harmony and balance, while expressing different nuances at their respective stages of maturation, making the entire palate so smooth. Also, tasting the “reserve” sake—kept in large isshobin (1.8-liter) bottles—was a unique experience. With each new assemblage, I feel that the IWA sake continues to evolve, perhaps reflecting more deeply Richard’s philosophy and interpretation of sake as well as new things that he has introduced into the world of sake. 富山•立山に酒蔵がある日本酒のIWA。Richard Geoffroyさんが新しいAssemblage 6のお披露目のため、フランスから全米ツアー中、Redwood cityのお寿司屋さんで行われた試飲イベントに参加させていただきました。元シャンパーニュの偉大な醸造家でいらっしゃるのでその経験も日本酒作りに応用されていて、また氏の日本の文化や理解の深さをいつも感じます。今回は、少し成熟したAssemblage 3 (2021)とブレンドに使うリザーヴ酒も試飲できたのも興味深かった。毎年のAssemblageごとにRichardさんの哲学がより反映され、さらに磨きがかかったものに進化している印象です。少人数のトレード向けイベントでしたが、このあたりのレストランのワインディレクターの方たちも参加していて、ワインと並んで日本酒を取り入れているのですね。

Great visit to Ridge Vineyards in Santa Cruz Mountains and meeting with John Olney, Head Winemaker and his team last week🍷 Always enjoy visiting this Montebello site where they produce its iconic Montebello wines from vineyards with limestone soils. The views from here are stunning overlooking the Silicon Valley.

We tasted Montebello Cabernet (some are old vines planted with gobelet), Montebello Chardonnay (small production) and Geyserville (Zinfandel base, field blend in Alexander Valley, Sonoma), from recent and older vintages. We also tasted 2025 wines from barrels. It looks like 2025 is a promising vintage in California! Visiting a producer with my mentor JB gives much deeper learning and insights, including from genuine discussion between winemakers. @jblfizz Thank you so much!🍷🥂 @ridgevineyards @jmolney

Visited Rhys Vineyards in Santa Cruz Mountains and tasted a range of wines made from #chardonnay and #pinotnoir 🍇 with Chief Winemaker Jeff Brinkman. Especially tasting pinot noir made with judicious use of oak to preserve the characters of the place, which clearly expresses the identity of each varied place in SCMs was a unique experience. Also it was great to taste Rhys sparkling wines as my first time (made with Rodolph Peters @lemesnil7007 as a sparkling adviser)! 🍾

今週、地元サンタクルーズマウンテンにあるRhys Vineyardsを訪問し、醸造長のJeffさんと試飲しました。ずっと北のAnderson Valleyからのブドウもありますが、特にサンタクルーズマウンテンの各地の畑ごとに作るシャルドネとピノノワールは、それぞれの土地の違い•個性を明確に表していました。また、Rhysでは、シャンパーニュのRodolphe Petersさんをコンサルタントに迎え、本格的なスパークリングワインも作っています。

今週は寒くて雨続きでしたが、家から車で40分ほどの近さでも山中は雪が降っていてびっくり❄️ 年に1週間ほど雪が降ることがあるそうです。

La fête du Champagne is one of a kind event that brings the greatest and top maisons and grower producers all together from #Champagne and providing the opportunity to taste the best examples of Champagne from the latest release, older vintages, Prestige cuvées to rare founds. This weekend, I attended the one held in Los Angeles.

So many exceptional experiences of tasting and so much fun! I met many great people — old and new friends who shared these special moments.

Thank you, Peter, Daniel & La fete team for the hard work to create such wonderful opportunities. Thank you, the participating producers for brining La Champagne to the west coast 🌴and sharing the stunning bottles. Now back home already 🏠. Last weekend I was in Echigo Yuzawa, Niigata, famous for great food, onsen ♨️, pure water, rice, and thus producing great #sake. This time, I was there to join the #champagne event of 1.5 days, with the exceptional lineup, collected and selected by @art.of.champagne 🍾. Also impressed by an enthusiastic and passionate group of Champagne lovers and friends! 🥂🔥

先週末は、越後湯沢で【樋口セラーを飲む会】に参加しました。行きも帰りも、寝ても？起きてもシャンパーニュ大好きな皆さんとご一緒できたのも嬉しく、シャンパーニュ漬けな1.5日でした。本当に楽しくて笑いっぱなし😁　樋口さんのセレクション、素晴らしすぎ‼️ 短い滞在ながら、温泉、へぎそば、地元のお酒、樋口さんお手製の炊き立ておむすび🍙まで、越後湯沢を堪能しました。

Last week — a day in #sonoma. Helped sorting Pinot Noir grapes from Yuki vineyard located in #westsonomacoast #organic , 3 miles away from the ocean. @freeman_winery Different Pinot Noir clones were harvested, sorted and vinified seperately, each of which tasted and appeared quite different. 🍇 Tasted also new 2025 Chardonnay and Pinot Noir wines under fermentation in tanks and barrels as well as base wines for sparkling wine. Great to see Akiko, Ken and Eiji san!

先週、日帰りで、ソノマのFreeman Wineryで、選果のお手伝い。海から近いWest Sonoma CoastにあるYuki Vineyardのピノノワール収穫の日でした。そのあとは、醸造中のの2025年ワインや、スパークリングワインを試飲しました。あきこさん、Kenさん、映司さんにお会いでき、良き１日でした🍇

Cristal Rosé picking club #CRPC became Coteaux Rouge Picking Club this year. We helped picking beautifully grown Pinot Noir grapes in “Charmont”, Mareuil-sur-Ay for Louis Roederer’s still wines. certified #organicvineyard The grapes are healthy and impeccable so we did not need much sorting in the vineyard. They do meticulous sorting the next day manually at the winery too.

It was followed by lunch to celebrate the 250th harvest for @louisroederer_ with this lineup!

Olivier Krugさんのご案内でKrug訪問。今回は、Trepailに２年前にできたLodgeから始まり、まずはGrande Cuvée 172で朝から乾杯。そしてAmbonnayのJosephワイナリーに移動。Clos d’Ambonnayの畑のそばに建てられたのですが、ビデオの中でもその畑の小ささがわかるかと思います。🍇　

試飲は今年リリースの新しい3つのキュヴェ。Clos du Mesnil 2009は、暖かい年らしく、オープンで寛容さがあり、今から楽しめる親しみやすさがあります。同時に、ピンと張り詰めた繊細さ、柔らかでクリーミーなテクスチャがある綺麗なワイン。今後の熟成した姿も楽しみです。まさに繊細な和食と相性が良さそうだと思いました。そして、Olivierさんの日本への造詣と理解の深さには(日本語も)いつも感銘を受けます😊

そして最新リリースの2012はマグナムとボトル比較。2012らしくふくよかさやオープンさがあり、いまから美味しく楽しめるヴィンテージです🍾

最近リノベーションしたメゾンは、前よりサロンやディナーのお部屋が広くさらに綺麗に豪華になっていました。

🍾 When in Paris, I like to visit this quartier @ Rue de Sèvres #leftbank . Last time, I visited this Hermes store (beautiful like an art museum) and had a glass of Champagne René Rutat.

Runé Rutat is a certified organic producer in Vertus. The brothers came to Japan for « Les Champagnes bio à Tokyo » to showcase their wines in 2023. The #champagne producer that I want to visit next time! 🥂 @champagne_rene_rutat

パリ左岸のボンマルシェ近くのエルメスのお店。この界隈、お買い物もゆっくりできるし、パリではよく行くのですが、ここのエルメスはアートミュージアムのように美しいです。中にカフェがあるのですが、シャンパーニュもありました🥂　

この時のグラスシャンパーニュは、Runet Rutat。Vertus拠点のオーガニック認証の造手で、2023年の東京でのオーガニックシャンパーニュ試飲会のときには来日してくださいました。

Invited to attend the Forbes Japan Gala dinner to celebrate its 10th anniversary at Palace Hotel🎉

It’s already 7.5 years (!!) since I started writing for Forbes Japan on wine and champagne as Official Columnist. I’ve written many pieces and each topic that I chose is special for me, filled with fond memories.

Throughout the evening, Le Grand Siècle champagne and Rose by @champagnelaurentperrier were gorgeously kept being poured. 🥂🥂

Worked as a navigator / moderator for the seminar with JM Seleque @jmseleque , organized by the importer Firadis @firadis_wine_club 🍾 Jean-Marc did great presentation and spoke about the overview of his family, place, #coteauxsudepernay #Pierry vineyards and winemaking, including some deeper topics such as aging for second fermentation with cork v. crown caps, changes in viticulture for climate change, and two types of perpetual reserve systems, which have reflected his winegrowing philosophy and wine style. And we tasted 6 champagnes from the range 🥂🥂

The beautiful evening yesterday to celebrate the 50th anniversary of #CristalRose in Tokyo, hosted by Frederic Rouzaud, the 7th generation of the family & CEO, Jean-Baptiste Lecaillon, Chef de Caves and Hirose san, founder of Enoteca.

Cristal Rose was born in 1974 by Frederic’s father with selected plots that Louis Roederer has historically owned and creative methods, which has improved further into more precised and fine-tuned wine by the current winemaker JB, with innovative ideas.

Every bottle served (mostly Magnum bottles, directly from LR cellar in Reims! ) during evening was shining and made all of us there connected and happy💫 So fortunate and grateful to have the opportunity to attend this celebration after the kick off event with #CRPC friends in Reims in April. 昨晩は東京で、ルイロデレールからオーナー家族の7世代目のフレデリック・ルゾー社長と、醸造責任者のJBさんをお迎えして、輸入元のエノテカさんが記念イベントを開催し、光栄にも出席させていただきました。

ラインナップは、アペリティフのCollection 244に始まり、Cristal Rose magnum 2008, Rose Vinotheque magnum 2002をはじめ、 Cristal & Cristal Rose尽くしで、その多くが、メゾンから直送のマグナムボトルというお祝いにふさわしいラインナップ💫

会場の、青山のTwo rooms @tworoomsgrillbar のお料理もひとつひとつ、クリスタルに合わせて丁寧に考えられていて、至福のひとときでした。招待客の皆さまも豪華で華やかな顔ぶれで、色々な方とお会いすることができました。何より、素晴らしいシャンパーニュとともに、皆さん、とっても楽しまれている、特別な雰囲気ができていたのが印象的でした。

Pierre Paillardにて、圧搾機にブドウを入れるお手伝い。シャンパーニュでは手で収穫されたブドウは、圧搾所に到着したら、なるべく早く圧搾機に入れられ、優しくプレスされます。圧搾して使うことのできるジュースの量は規則で決められていて、単位となるmarc (=4000kg)のブドウの量、倍量の8000kg、半量の場合など、生産者の規模やブドウの量によって圧搾機の大きさが異なります。圧搾機のタイプも複数あります。

一つケースあたり約40kg. 重かったです、鍛えねば💪🏻😁

Hosted one last event «sushi 🍣 & Champagne 🍾 dinner» last month, at Hashiri in Tokyo, before going back to CA. It was the relaxed dinner with a great group of Champagne lovers & students and always a pleasure for me to speak about #champagne.🥂 I prepared a wonderful lineup, as well as a mini, educative blind tasting — comparing Chardonnay 100% and Pinot Noir 100% and also identifying the origins/crus of the grapes. 🍇 Now I’m planning next classes!

4月のChampagne Deutz訪問の様子です。素敵な邸宅から始まり、セラーや畑を見学して、Chef de CavesのCarolineさんとベースワインとブレンド、ラインナップを一通り、テイスティング。Carolineさんからお話しを伺えて、Deutzのこと、これからのことなどお聞きでき、本当に良かったです。ランチはメゾンのシェフのお料理をシャンパーニュと合わせて👨‍🍳　どれも美味しかったのですが、和牛が、日本で食べるのみたい、と思って産地を聞いたら、宮崎牛でした。ランチでは、Amour de Deutzの2002のヴィノテークなど特別なワインも試飲させていただきました。Teamの皆さんがあたたかで、すっかりファンになり、Deutzのこと、もっと知りたいと思いました。

Dinner with a unique and newly launched Champagne program «Les Mystères de la Champagne», created by Chef Sommelier Philippe Marques @oenophil_marques

This is an educational, comparative tasting that you cannot usually experience — for example bottles with different disgorgement dates (= different length of lees-aging), bottles sealed with a crown cap or on cork for second fermentation, bottles with different levels of dosage or different type of liquors (cane sugars v. RCM), bottles expressing different crus or vineyards made in the same way, and so on.

These are experimental or small batch production that each producer has specially offered for this program. And the ideas and learning opportunities on Champagne from these kinds of tasting are unlimited.

I fully enjoyed the entire program. Notably, the team at Royal Champagne is amazing with warm hospitality and professional service, that creates this luxurious space special and cozy. Also I really liked the concept that these programs are closely connected with local Champagne community and producers, and showcase the diversity of Champagne.

ディナーは、星付きのダイニングLe Royalにて🌟　この度、Chef SommelierのPhilippeさんにより新しいシャンパーニュプログラムがローンチされました。その名も「シャンパーニュのミステリー」。

とても面白い、教育的な比較テイスティングで、例えば、デコルジュマン(澱熟成期間の)違い、ドサージュレベルの違い、ドサージュリキュールの違い、同じ造りの異なる村や畑、などを並べて試飲できます。各生産者がこのプログラムのために用意したもので、こういったボトルは、実験的なものだったり、少量だったりで、なかなか一般には体験できないのですが、ここではワインリストに入れ込まれていますので、どなたでも、しかも美味しいお料理とともに体験できます。

オープンしてから何かとよく行く機会があるRoyal Champagneですが、今回のプログラムで、スタッフ皆さんのホスピタリティ、心地よいサービスと空間が何よりの魅力だと思いました。また今回のテイスティングプログラムは、両方とも、地元生産者たちとの協力のもと作られていて、それもよいなと感じました。

あと、シャンパーニュの景色を見ながらのプールや、スパも有名なのですが、今回フェイシャルをして、癒されました。肌診断もしてくれます。

お料理もとても美味しくて。もう一回食べたいです😇　感想文みたいな投稿でしたが、雰囲気が伝わったら嬉しいです。

先月のシャンパーニュ訪問は、到着後すぐ、Royal Champagneによるご招待の1泊2日のプログラムに参加しました。ここは、シャンパーニュのラグジュアリーホテルで、これまでもランチやディナー、メゾンのプログラムの宿泊や試飲で、何度も来ていますが、じっくりフルで体験するこのプログラムを楽しみにしていました❣️

高台に建っていて、シャンパーニュを見渡せる眺めも最高。シャンパーニュに来たら、アペリティフや食事だけでも一度は行ってみてほしい場所です✨ 豪華ホテルですが、スタッフの方たちが温かく、居心地がよいのもポイントです☺️ 2月の1988/1989/1990の試飲ジャッジの会場もこちらでしたが、ソムリエチームの仕切りもプロフェッショナルで素晴らしいものでした。

お部屋に用意いただいていたのは、Leclerc Briant のLes Monts Ferrés. メニル村に程近いVertus村の素晴らしい区画からのシャンパーニュなのですが、昨年、東京のLes Bio à Tokyo試飲会でも出ていたので、飲まれた方もいらっしゃるのでは🥂

今回は飛行機のトランジットが長く、24+時間でようやく到着。さすがに最後はふらふらなりましたが、素晴らしい夜でした。

Mathieu generously shared the great lineup, including precious aged bottles for the dinner. Especially 1982 Nicolas François en magnum showed the perfect maturation with orange blossom, peony, dried fruits, licorice, mocha and crème brûlée. The bottle was original disgorgement in early 1990s and dosed with 12g/L. Clos Saint Hilaire always stand out with its uniqueness. It is truly attached to the place and style of its own. This experience has convinced me that Billecart Salmon champagnes age beautifully over the time. Thank you so much for this entire program to understand more the essence of Billecart Salmon. 🙏 @mrbillecart @florent_nys @ginalyons_

🌟 Tasting at De Venoge « 4/13/2024» — for the past few years, Gilles, CEO of De Venoge @gillesdevenoge @champagnedevenoge and I have talked occasionally and he kindly suggested he would open some special bottles and so bring friends.

He took us to the historic journey of Champagne by showing old vintages of 1980s, 1970s de Venoge and also generously opened even older bottles of other producers that he collected such as 1940s, 1930s…. Speechless. It was an incredible and educational journey to experience Champagne in those days. Among others, 1978 De Venoge en magnum which was made 100% Chardonnay from Cramant (disgorged in 2/2019) was shining with freshness and ripe fruits. ✨

De Venoge CEO Gillesさんが特別なテイスティングをしてくださいました。もともと、私のバースデーヴィンテージ1978がマグナムのみなので、開ける時はお友達を連れておいで、と言ってくださっていたところ、今回、1970sだけではなく、1980年代、そして彼が集めた1940sや1930sの古いシャンパーニュを試飲。こうしたなかなか味わえない古い時代のシャンパーニュを味わうのは、シャンパーニュの歴史を辿るような、またとない体験でした。

麻布十番の可不可さんを貸切りさせていただき、いつもクラスやイベントに来てくださる方たち向けに、和食とシャンパーニュの会を開催しました。

色々悩んだのですが、シャンパーニュの多様なスタイルをご紹介したく、選びました。そして、各シャンパーニュを、宮下さんの繊細で優しい味わいのお料理とともに、皆さんにお楽しみいただきました。

UNESCOの無形文化遺産にも登録されている和食。シャンパーニュの生産者たちからも、和食とシャンパーニュの相性のよさや可能性についてお聞きすることが多々あるのですが、こうした会で皆さんの意見も聞いてみたかったので開催できよかったです。

ご参加いただいた方々、どうもありがとうございました。

🍇 Vineyard day with Louis Roederer

Nothing is better than the hands-on experience to learn the vineyard practice. I had the pleasure of joining the vineyard team @johann_merle @louisroederer_ and participated in chicotage and pruning work.

LR is perhaps the first producer that planted its own nursery in Champagne where they grow rootstocks, massal selection, do viticulture experiments, and preserve the historical collection of their massal selection vines.

On this day, Essi and I joined the Team and helped preparing rootstocks for the next year’s plantings (called Chicotage). Then, after the lunch with Collection 243 en magnum (which tasted extremely delicious especially after the work!), we moved to Mareuil-sur-Ay, the plot called « Blanchiens » where vines are planted with very high density (12,500 vines per hectare). Here, Johann showed how to do a specific pruning method, « Guyot poussard ». ✂️

It was only a few hours of work but it has given me an idea of understanding vineyard work more in practice as well as the craftsmanship that LR maintains throughout the process of Champagne making. Thank you for this precious opportunity and special program for the day. 🍇🍾
